1 1/2 cups of warm water
2 packets of active dry yeast
1/3 cup of sugar
1 tablespoon of salt
2 eggs
1/2 cup of melted butter or margarine at room temperature
1/2 cup of cooked and mashed sweet potato
6 1/2 cups of all-purpose flour or more as needed
2 tablespoons of melted butter to brush

Pour the warm water into a large bowl
Sprinkle the yeast over the water
Mix until dissolved
Add the sugar, salt, and mix well
Let it rest for a few minutes until the liquid starts to bubble slightly
Add the eggs, melted butter, mashed sweet potato, and 3 cups of flour
Beat until smooth
Add more flour as needed and knead with hands until all the flour is incorporated into the dough
Knead the remaining flour and fold into a ball
Brush the dough with 1 tablespoon of melted butter
Cover with plastic wrap and a towel
Refrigerate for 2 hours
Remove from refrigerator and shape into various shapes, such as rolls or buns
Cover and let it rise in a protected area for 1 hour
Heat the oven to 400°F (200°C)
Brush with butter and bake for 15 minutes until golden brown
Serve warm
If serving as a gift, serve at room temperature after warming slightly
