1 kg of potato

1 tablespoon of olive oil
1 small onion, finely chopped
1 clove of garlic, minced
200g of sliced calabresa sausage
50g of chopped green olives
1 can of tomato sauce

Peel the potatoes and boil them in salted water until they are tender
Drain well and mash with a potato masher or fork
In a bowl, combine the mashed potato, eggs, butter, Parmesan cheese, flour, and catupiry
Mix well to form a smooth batter
Place the batter in a greased baking dish and bake in a preheated oven at 200°C for 50 minutes or until golden brown
Sauce
Heat the olive oil in a pan over medium heat, then sauté the onion and garlic until softened
Add the sliced calabresa sausage and cook until browned
Add the chopped green olives, tomato sauce, salt, and pepper
Simmer for 5 minutes with the lid on
Remove the baked batata from the oven, place it on top of the sauce, and serve immediately
