Combine the water, yeast, and 1/2 cup of sugar in a bowl
Let it rest for 2 minutes
Add 2 eggs, salt, butter, and 2 cups of flour
Beat until smooth
Add sufficient flour to obtain a soft dough
Place the dough on a lightly floured surface and knead for 8-10 minutes until smooth and elastic
Shape into two large and two small pieces (see 'Secrets for a delicious bread' for guidance)
Place one piece in each baking dish, cover with another piece
Repeat the process in another baking dish
Cover the dough with a cloth and let it rise in a warm place for 45 minutes
Beat the remaining egg with 1 teaspoon of sugar
Brush the loaves with this mixture
Bake in a moderate oven at 170°C (325°F) for about 40-45 minutes
Remove from the baking dish immediately
Cut into two challahs.
