12 oz of cod or lingcod fillets
2 bunches of spinach
1/2 cup of finely chopped onion
salt and pepper to taste
4 tablespoons of butter or margarine
3 1/2 tablespoons of all-purpose flour
2 2/3 cups of heavy cream or whole milk
1/3 cup of white wine or water
1/4 cup of grated cheddar cheese
sweet paprika
12 oz of cod or lingcod fillets

Wash, rinse, and cook the spinach
Dry it well and chop into small pieces
Rinse again, removing all excess liquid
Mix with chopped onion, salt, and pepper
Place in a refractory dish holding 5 cups
Season the fish fillets with salt, pepper, and the sauce, roll them up, and place on top of the spinach
Dissolve the butter or margarine and mix with flour
Add heavy cream or milk and stir well until the sauce thickens
Add water or white wine, a bit more salt, and cook until it simmers well
Remove from heat and add 3 tablespoons of grated cheddar cheese
Pour the sauce over the fish and spinach
Sprinkle with remaining cheddar cheese and a little sweet paprika
Bake in a moderate temperature oven (170°F) for 25 minutes
Serve immediately, portion into 4.
