1 medium onion, finely chopped
2 tablespoons of parsley, finely chopped
2 cups of breadcrumbs

1 kg of fish filets (roebuck, cod or badejo) cut into 8 cm pieces
2 tablespoons of olive oil

Prepare the filling: Mix together the bacon, onion, parsley, and breadcrumbs
Season with salt and black pepper
Arrange half of the fish filets on a baking dish (preheated to 180°C) greased with olive oil
Reserve 1/2 cup of the filling and place the rest over each fish filet
Press down well
Cover with the remaining fish filets
Dust with the reserved mixture and drizzle with olive oil
Bake at 180°C for about 40 minutes or until the fish is cooked through
Serves 6.
