1 whole golden fish (Namorado or Pintado) of 1-2 kg
4 slices of bacon
1 tablespoon of butter or margarine
1 tablespoon of olive oil
1/4 cup of finely chopped onion
1/4 cup of finely chopped parsley
1/2 cup of red mushroom caps with stems, finely chopped
2 1/2 cups of breadcrumbs
salt and pepper to taste
2 tablespoons of lemon zest
1/4 cup of heavy cream

In a pan, melt the butter or margarine with the olive oil
Add the onion and parsley, and let it cook slightly
Add the mushrooms and breadcrumbs
Season with salt, pepper, and lemon zest, then mix well
Stuff the fish and close with toothpicks or skewers
Place in a baking dish lined with foil and cover with bacon slices
Bake in a moderate oven for 30-40 minutes or until the flesh flakes easily when tested with a fork.
