Heat the olive oil and annatto extract, then sauté the onion, garlic, cilantro, and tomatoes
Add the siri crab and cook while stirring for a few more minutes
Season this moqueca to taste with salt and black pepper
After straining through a sieve, place the mixture into siri crab shells
Beat the eggs until frothy and distribute over the siri crab mixture
Sprinkle Parmesan cheese over the eggs
Put the siri crab cakes in a hot oven and bake until golden brown for 5 to 7 minutes
