8 fish fillets (1 kg)

Clean the fish fillets with a damp cloth or paper towel
Sprinkle with salt and pepper
Mix in the carrot, parsley, red bell pepper, and 60g of melted butter
Finally add the bread and onion and mix well
Season to taste
Spread this mixture over the fish and roll up
Secure with toothpicks
Place in a greased baking dish
Brush with melted butter
Bake in a moderate oven for 20-30 minutes or until the fish is cooked through, but not browned.
