Preheat the oven to 200°C
Place the tender mignon in a roasting pan greased with olive oil
Season the meat with salt, garlic, and olive oil; then bathe it in red wine and sprinkle with oregano

Roast for 20 minutes
Turn the mignon over and arrange cherry tomatoes around it
Roast for an additional 15 minutes

Turn the meat again and top it with melted cheese slices
Return to the oven for five minutes or until the cheese is melted
Check the seasoning

In a bowl, mix cassava flour with onion, green pepper, and salt
Add chopped olives, pimenta-do-mojo, water, vinegar, parsley/cilantro, and mix until you get a tasty and granular farofa
