Preheat the medium oven (350°F)
Divide the honey into 6 individual ramekins
Beat the eggs with sugar, vanilla, and nutmeg until frothy
Gradually add the milk while stirring continuously
Pass the mixture through a sieve three times and pour it into the ramekins, leaving the honey at the bottom
Bake in a water bath for 1 hour, or until firm
Remove from the water, let it cool, and refrigerate
Unmold and serve chilled
