Cake
2 egg yolks and whites separated
1/2 cup of sugar
1/2 cup of hot milk
1 cup of wheat flour
1/4 cup of cocoa powder
1 tablespoon of active dry yeast
Filling
100 g of maraschino cherry with syrup
250 g of whipped cream fresh and well-beaten
200 g of coarsely grated semi-sweet chocolate
Cake

Beat the egg whites until stiff
Add the yolks and sugar, still beating
Add the hot milk and beat for three more minutes
Remove from the mixer, add the flour, cocoa powder, and yeast sifted together
Mix well
Place in a rectangular baking dish greased and floured
Bake in a preheated oven at 180°C for approximately 20 minutes
Let cool, unmold, and cut into small rectangles
Pit the cherries, reserving some for decoration
Separate the syrup
In individual servings, place a layer of pão-de-ló and moisten with the cherry syrup
Sprinkle with cherries and chocolate
Place a final layer of whipped cream
Refrigerate for at least 30 minutes
Decorate with grated chocolate and cherries.
