    Pass 1 1/2 cups of flour through a sieve. Combine 2/3 cup of fat and cut it into pieces the size of a green bean using two knives. Add a pinch of salt and, always cutting with two knives, 3 tablespoons of cold water, one at a time. Form a ball and roll out on a surface covered in flour.
