2 cups cooked green beans (fresh or canned)

Drain the green beans and strain them through a sieve
There should be 1 cup of green bean pulp
Season to taste with salt, pepper, and chopped onion, if desired
Combine well-beaten egg yolks and melted butter
Add beaten egg whites until stiff
Place in 4 individual molds or a ring mold, filling them 2/3 full
Bake in a moderate oven, in a water bath, for 20 minutes for the molds, or 30 minutes for a larger mold
Serve with white sauce and garnish with whole green beans.
