8 chicken thighs

1 mashed garlic clove
1/2 cup chopped onion
1/2 cup chopped green pepper (optional)
1/2 cup chopped fresh parsley
1 teaspoon salt
1/8 teaspoon black pepper
4 tomato halves, seeded and chopped

Heat the olive oil in a skillet
Add the garlic, onion, green pepper, and salt
Cook over low heat for 15 minutes
Season the chicken with salt and pepper and add to the skillet
Cook for an additional 15 minutes
Cover and cook for 45 minutes
Remove the chicken from the skillet and place on a warm plate
Add the tomatoes to the skillet, if needed
Cook for an additional 5 minutes and serve over the chicken
Serve 6 portions.
