300g grated Parmesan cheese
300g butter or margarine

Seasonings at will: salt, garlic, pepper, parsley, vinegar, onion
From the evening, cut the chicken at the joints and season with the above seasonings; let it sit for a day or two
The next day, melt the butter and set it aside; grate the cheese and also set it in a plate apart
Remove the chicken from the seasoning and pat dry piece by piece
Grease a baking dish slightly and coat each piece first in butter and then in grated cheese
Place the pieces one beside the other in the baking dish
Do not place one piece on top of another
Put it in a moderate oven for 20 minutes or so, reduce heat and continue cooking until browned (another 30 minutes)
This chicken can be served cold or hot.
