1 whole cleaned chicken
Lime juice from 1 lime
Salt and pepper to taste
3 tablespoons olive oil
4 tablespoons butter
1 medium onion, chopped
2 cloves garlic, minced
1/4 cup green olives, pitted
1 cup pecans, chopped
2 cups cassava flour
1 cup pecan flour
Chopped fresh parsley to taste
1/2 cup chicken broth
Some whole pecans for garnish

1 Preheat the oven to 400°F
Season the chicken with lime juice, salt, and pepper
Set aside
In a large skillet, heat the olive oil and butter
Sauté the onion and garlic until softened
Add the olives, pecans, and flours
Season with salt to taste
Mix well to combine and form a cohesive farofa
2 Turn off the heat and let it cool
Stuff the chicken with half of the farofa and set aside the rest
Truss the chicken, place in a buttered baking dish, and pour in the chicken broth
Cover with aluminum foil, bake for 40 minutes, then remove foil to let it brown
3 Remove the foil and let it caramelize
Transfer to a serving platter, surround with the reserved farofa, and garnish with whole pecans.
