3 cups of chicken broth
1 cup of rice
1/3 cup of olive oil
4 cloves of garlic, minced
2 boneless chicken thighs, cut into small pieces
1 medium onion, diced
1 red bell pepper, cut into small pieces
1 fennel bulb, cut into small pieces
1 can of vegetable selection
1 pound of Portuguese sausage, sliced into cubes
1 turkey giblets, cut into small pieces
Salt to taste

Sauté the onion and garlic in olive oil for 3 minutes over high heat, stirring occasionally
Add the chicken thighs, sausage, and vegetables and cook until they are tender
Add the rice and chicken broth
Cook until the rice is cooked but still slightly firm
Add the vegetable selection, stir well, check the seasoning, and serve.
