Preheat the oven to hot temperature (220°F)
Season the chicken with salt and black pepper and pat it dry with 4 tablespoons of butter or margarine, or olive oil
Melt the remaining butter for basting
Place the chicken pieces, skin side up in a roasting pan
Put in the oven and roast for 40 to 45 minutes or until golden brown, basting several times with the melted butter
Serve with spaghetti, garlic bread, and tomato sauce (see recipe next to it)
