6 chicken breasts
2 eggs, lightly beaten
salt and pepper to taste
3/4 cup all-purpose flour
1/2 cup breadcrumbs
1 can of tomato puree
1 tablespoon olive oil
1 tablespoon Worcestershire sauce
1 tablespoon butter or margarine
1/2 cup grated Parmesan cheese
250g mozzarella cheese, cut into slices
6 chicken breasts

1 tablespoon olive oil
1 tablespoon Worcestershire sauce
1 tablespoon butter or margarine
1/2 cup grated Parmesan cheese
250g mozzarella cheese, cut into slices
Mix the eggs, salt, and pepper
Dip the chicken breasts in the eggs and then in flour
Heat the olive oil and fry the chicken breasts on both sides
Place in a baking dish
Remove any excess oil from the frying process
Combine tomato puree, Worcestershire sauce, and butter or margarine
Let it simmer for 5 minutes
Add grated Parmesan cheese
Pour everything over the prepared chicken breasts
Sprinkle with additional Parmesan cheese
Cover with aluminum foil
Bake in a moderate oven for 30 minutes
Remove the foil, top with mozzarella slices, and bake until the cheese is melted
Serve hot.
