Beat the eggs in a mixer with salt
Add the heavy cream and continue beating for another two minutes

Grease an anti-stick frying pan with a little oil and heat it well
Pour the egg mixture into the pan and tilt it slightly to spread it evenly
Cover and cook over low heat for two minutes

Flip the omelette, add the mozzarella cheese slices and prosciutto

Fold the omelette in half, cover again and let the mozzarella melt
Serve immediately.
