Cut the lemon and squeeze it over the chicken to clean it well

Lay out the chicken flat with a knife, opening it from the back to the front, and place it in a baking dish

Cut the butter into pieces and spread them on top, distributing the slices of bacon and sprinkling with salt, pepper, and tarragon

Drizzle with olive oil, then bake at 400°F for 50 minutes or until golden brown
