Clean the chicken and cut it into pieces
Season with salt, black pepper, onion, and garlic
Heat the olive oil in a pan
Sear the chicken pieces
Once well browned, add tomato puree, coriander, and 1 cup of water
Cover the pan and let it simmer slowly
Add the remaining cup of water and cook until the chicken is tender
Remove from heat
Debone the chicken pieces and cut them into smaller bits
Return to the pan
Add coconut milk and cornstarch
Bring to a boil, stirring constantly, until thickened
