2 cups cooked chicken breast
1 ripe papaya
1/2 cup unsalted butter, softened
1 tablespoon chopped scallion
1 teaspoon curry powder
2 tablespoons plain nonfat yogurt
2 tablespoons low-fat mayonnaise

Cut the papaya in half lengthwise and carefully remove the pulp
Reserve the shell and set it aside
Dice the pulp into small cubes and combine with the chicken
Add the remaining ingredients and stir slowly
Place half of this mixture into the papaya shell and cover with aluminum foil
Bake in a medium oven for approximately 15 minutes
Serving immediately.
