1 Peel the sweet potato, cut it into thin slices, and soak them in water with salt to prevent browning
Beat the egg yolks well, but not too much
Set aside
2 In a bowl, mix together the egg yolks, salt, and black pepper to taste
Set aside
Heat a small amount of olive oil in a frying pan and place the sweet potato slices that have been drained
Let them brown slightly on both sides
3 Mix together the egg yolks and milk with the beaten egg whites and pour over the sweet potato
Use a spatula to release the edges of the fritter
Cover the pan and flip the fritter over so that it sits on top of the cover
4 Add a little more olive oil to the pan and flip the fritter back over onto the pan again
Serve with grated cheese and chopped parsley sprinkled on top.
