Beat the leftover fish strips that weren't used for Wednesday's dinner with 3 or 4 eggs (if you want to reduce fat, use 3 egg whites to 1 egg yolk) and vegetables - if there are leftovers
Pour the mixture into a skillet and cook it entirely
If preferred, bake it in the oven
Use up any leftover bell pepper and mushroom halves from Wednesday's dinner and serve with the fried fish.
