4 medium-sized potatoes (around 600g) without skin

Grate the potatoes using a coarse grater (do not wash or dry them after) and season with salt
Grease a large non-stick skillet with a little bit of butter
Place mounds of 1/3 cup potato mixture onto the skillet and flatten slightly with a spatula
Fry over medium heat until golden brown, flipping halfway through
As you're frying, add more butter to the skillet as needed
Keep the fritters warm in a preheated oven
Serve immediately while still crispy
