1 can of pineapple chunks passed through a liquidizer
1 tablet of chicken or turkey broth
1 tablespoon of lemon juice
1 teaspoon of salt
1 1/2 cup cooked chicken, diced
1/4 cup chopped celery
1/4 cup chopped green pepper

Strain the pineapple syrup and reserve it
Set aside the pineapple
Add water to the syrup to obtain 1 1/2 cups of liquid
Heat over medium heat with the broth, gelatin, until everything is dissolved
Chill in the refrigerator and let it thicken slightly (this takes about 45 minutes)
Add the crushed pineapple, chicken, celery, and green pepper to the gelatin mixture
Pour into a mold of capacity 4 cups or individual molds of capacity 1 cup
Chill in the refrigerator until firm
Unmold over lettuce leaves
Serve 4 portions at 180 calories each.
