3 tablespoons ice-cold water

1 1/2 kg zucchini, sliced into thin strips
1 onion, thinly sliced

Mixed dough
Step 1: Make a farofa with flour, salt, baking powder, and butter
Add the ice-cold water gradually and mix until you get a homogeneous mixture
Step 2: Make a ball with the dough and flatten it into a disk of about 15 cm in diameter between your hands
Wrap in wax paper and refrigerate for about 15 minutes
Achieve medium heat in the oven
Fillings
Step 1: Place zucchini on a rack and sprinkle with 2 teaspoons of salt
Let it drain for 15 minutes
Passe through cold running water and let it dry on paper towels
Step 2: In a frying pan, cook onion over medium heat in olive oil until softened
Add garlic and cook for an additional minute
Add zucchini and season with black pepper and remaining salt
Cook for about 3 minutes
Remove from heat and let it cool down
Assemble the frittata according to the diagram below
Assembling
Step 1: Line a frying pan with wax paper
Cross two strips of dough on top, folding them over the edges
Open the dough and press it onto the sides and bottom
Step 2: Distribute the fillings evenly over the dough and sprinkle with Parmesan cheese rind
Dob the edges over the fillings
Step 3: Cut off excess dough from the edges and decorate the frittata
Baste lightly with beaten egg and bake until golden brown
Remove from pan by pulling on the wax paper.
