1 large chicken cut into pieces
1 medium onion
2 whole garlic cloves
12 orange segments, peeled and toasted
1 tablespoon all-purpose flour for the sauce
All-purpose flour for dusting the chicken
1 cup white wine
2 tablespoons dark rum
Hot water
4 tablespoons olive oil
Salt and pepper to taste

Dry the chicken pieces well, dust with all-purpose flour, season with salt, pepper, and in a pan, slowly fry them in hot olive oil with the onion and garlic until golden brown
Remove the fried chicken and reserve
Add 1 tablespoon of all-purpose flour to the pan, stir to caramelize, add the white wine and rum
When the wine reduces by half, add the reserved chicken and garlic
Cover with hot water, stir, season with salt and pepper to taste
Simmer in a covered pan over low heat until the chicken is tender
Mash the garlic cloves with the orange segments, add a little of the sauce from the pan and mix everything together for 5 minutes more
Serve warm
