1 whole chicken, 1.5-2 kg

1 tablespoon of chopped fresh thyme
2 tablespoons of lemon juice
1 small red bell pepper, diced
2 cloves of garlic, minced
4 small onions, finely chopped
4 tomatoes
1 cup of water
2 tablespoons of olive oil
1 tablespoon of butter
2 slices of crispy bacon, diced
1/2 teaspoon of ground cumin

Cut the chicken into pieces and season with salt, thyme, lemon juice, bell pepper, garlic, and onion
Let it marinate for about 2 hours
In a saucepan, combine tomatoes, water, and a pinch of salt
Bring to a simmer, then reduce heat and let cook for 10 minutes
Remove from heat, let cool slightly, and blend in a blender or food processor. Reserve
In another saucepan, melt butter, add olive oil, crispy bacon, and cumin
Cook until the chicken is golden brown
Add the fried chicken to the saucepan with the blended mixture and finish cooking
Finally, add chopped fresh parsley and scallions.
