400g of smoked turkey breast, ground
1 tablespoon of English Worcestershire sauce
1/3 cup of toasted pecans, chopped (50g)
1/4 cup of chopped onion (40g)
6 black olives, pitless and finely chopped (60g)
1/2 cup of ricotta cheese, passed through a sieve (100g)
2 eggs
1/2 teaspoon of salt
4 cracker crumbs (80g), crushed

In a medium bowl, combine all ingredients and mix well with your hands until you get a homogeneous mixture
Divide into four portions
Grease a surface with oil
Using an 8cm diameter cookie cutter or shaping by hand, form each portion into a burger
Reserve on the greased surface
Preheat a large skillet or griddle over medium-high heat
Grease the skillet and reduce the heat to medium
Fry two burgers at a time until they're golden brown (approximately 2 minutes per side)
Arrange them in a tray and serve immediately
