5 cups (about 2 lbs) of seedless watermelon, cut into medium-sized cubes
1 cup (about 8 oz) of seedless watermelon, cut into small cubes
1/2 cup of pomegranate
1 cup of chopped bell pepper without seeds and pulp
1 cup of salted capers, rinsed and drained
1/4 cup of red pepper flakes
1/4 cup of finely chopped onion
1/4 cup of chopped fresh parsley
3 tablespoons of lime juice
1 1/2 tablespoons of white wine vinegar
1 tablespoon of paprika
Salt to taste

Blend the medium-sized watermelon cubes with pomegranate in a blender
Strain and reserve three cups of juice
Combine the remaining ingredients and stir gently
Chill in the refrigerator for an hour
Serve chilled.
