In a saucepan, combine the milk, heavy cream, and bring to a simmer over medium heat
In a blender or food processor, beat the eggs with 1/4 cup of sugar until thick and creamy
Add the warm milk mixture and blend for an additional 5 minutes, stirring constantly
Remove from heat and stir in chocolate chips until melted and smooth
In another saucepan, combine sliced bananas, lime juice, and the remaining sugar
Cook over medium heat, caramelizing the bananas with care to prevent burning
Let cool, then chill
Pulse cookies and nuts in a food processor until coarsely chopped
Assemble individual servings by layering chocolate cream, caramelized banana, cookie crunch, and whipped cream
Serve chilled.
