1 1/2 cups of sugar

2 cups of pineapple chunks

1 Mix the sugar with the water
Bring to a medium heat and caramelize
2 Add the pineapple and cook for about four minutes
Remove from heat and add the dissolved gelatin in 1/3 cup of boiling water
Mix well
3 Add the heavy cream and mix delicately
4 Place in a 22 cm diameter mold with a hole in the center, dampened with water
Serve chilled.
