3 green mascarpone halves
2 tablespoons of lemon juice
1 tablespoon of vanilla extract
3/4 cup of raisins soaked in 2 tablespoons of rum
1/2 cup of chopped nuts (50g)
1/2 cup of fresh whipped cream to thicken

Peel the mascarpone, remove the seeds and cut into fine slices (use a slicer)
Cook in a pan with boiling water and lemon juice for 5 minutes
DRAIN the mascarpone and sprinkle with vanilla extract
Add the drained raisins, nuts, and mix
Baste each pancake with whipped cream and place a little filling near one side of the dough
Roll up and place on a tray or individual plates
If desired, serve with a scoop of cream or pistachio ice cream
Makes 8 pancakes
