2 boxes of raspberry gelatin

2/3 cup of apricots, chopped (160g)
1 cup of chopped walnuts, pecans, or hazelnuts (120g)
2 cups of pineapple juice, drained and cubed

Dissolve the gelatin with the ginger in boiling water
Add the apricots
Chill in the refrigerator until slightly thickened
Add the walnuts and pineapple and mix carefully
Pour into a decorative mold greased with oil (do not use butter)
Chill in the refrigerator until firm
Demark, to serve
Garnish with whole pineapples or walnuts
Serve 12 portions
