'1 1/2 kg of ripe mangoes'

'2 tablespoons of lemon juice'
'1 tablespoon of flavorless gelatin'

Peel the mangoes, cut them up and remove the seeds
Mix together in a pot the sugar, water, and lemon juice
Cook over low heat (20 minutes) until it becomes syrupy
Stir the mixture frequently to prevent burning
While the mangoes are cooking, soak the gelatin in 3 tablespoons of water
Add the warm mangoes and stir until dissolved
Purée everything using a blender
Taste and add more sugar if desired
Pour into a mold with water
Refrigerate and unmold when serving.
