1 box of lemon gelatin
3/4 cup boiling water - 180 ml
7 ice cubes
1 cup heavy cream from a can or 3/4 cup fresh heavy cream, slightly whisked

7 ice cubes
1 cup heavy cream from a can or 3/4 cup fresh heavy cream, slightly whisked
Dissolve the gelatin in the boiling water
Add the ice cubes and mix until the gelatin starts to thicken (2-3 minutes)
Remove some of the ice that hasn't melted
Set aside 3/4 cup of gelatin and reserve
Add heavy cream to the remaining gelatin
Alternate between the two mixtures in 4 individual scoops
Run a knife several times through the mixture to blend well
Pulse 4 times.
