1 1/2 kg of slightly unripe but large mangoes (about 7 big ones)

Cut off the pit from the mangoes, but don't remove the seeds or pit
Cut the mangoes into small pieces and place them in a pot with the water
Cover and let it boil vigorously over high heat
Reduce the heat and cook until the mangoes are tender, about 20 minutes
Place a cloth over a pot and strain, pouring the cooked mango and liquid through the cloth
Allow the liquid to drain into the pot, stirring the mango occasionally to allow the liquid to escape
Melt 4 cups of sugar and mix with the mango puree and lime juice
Let it come to a boil and cook until it reaches the gelato point
Remove any foam from the surface and immediately place in sterilized, warm jars
Close tightly
Use within 2 1/2 cups or 40 tablespoons
