Peel the mangoes
Remove the pits and cut into pieces
Use 3/4 cup grated ginger for each cup of fruit
Combine the juice and grated orange peel
Cook over medium heat for about 1 hour or until thickened
Place in sterilized jars and seal tightly
Total yield: 6 cups or 1.5 liters
Note: To check if the pudding is set, place a small amount on a plate and let it cool
It should be thick and not runny when the plate is tilted.
