For the dough
1/2 cup all-purpose flour (180g)
1/3 cup grated carrots (60g)
1/3 cup cold butter, cut into small pieces (65g)
1 tablespoon water
For the filling
1/2 cup melted butter (100g)
3/4 cup brown sugar (115g)
4 large eggs, slightly beaten
1/4 cup honey (60ml)

1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

1 1/2 cups banana puree, cut into 1 cm pieces (370g)

Prepare the dough: In a large bowl, combine all-purpose flour, grated carrots, and cold butter
Mix with your fingers until it forms a crumbly mixture
Add in the water and mix lightly with your hands
Form a ball with the dough
Wrap it in plastic wrap and refrigerate for about 15 minutes
Auiliary the oven to 180°C (medium)
Prepare the filling: In a large bowl, whisk together melted butter and brown sugar until well combined
Add in the eggs and mix until smooth
Add in the honey and mix well
Reserve the filling
In a small bowl, combine all-purpose flour, nutmeg, cinnamon, and baking soda
Mix well
Transfer the mixture to the bowl with the brown sugar mixture
Mix until just combined
Add in the banana puree
Mix until just combined
Dust a flat surface with all-purpose flour
Roll out the dough until thin
Use it to line a 25 cm diameter mold
Trim the edges with a knife
Filling the dough with the reserved filling
Bake in the preheated oven until the filling is set (about 40 minutes)
Remove from the oven, let cool completely, and serve

Note: You can prepare this cake the night before
Wait for it to cool completely, cover with aluminum foil, and store at room temperature until serving.
