4 cups of firm strawberries
2 cups of sugar
juice of 1 lemon

Wash and hull the strawberries, then dry them with paper towels
In a saucepan, mix together the lemon juice and sugar
Stir until the sugar is dissolved
Heat the mixture over low heat, stirring constantly, until it forms a syrup
Add the strawberries and remove the saucepan from the heat
Allow the strawberries to steep in the syrup for 15 minutes
Heat the mixture again over low heat, cooking for about 5 minutes or until it thickens
Let it cool, then mix well and store in sterile, warm glass jars
Fill 3 jars with 250g each.
