1 1/2 cups granulated sugar
1 pinch of salt
1/3 cup water
2 tablespoons (of soup) red food coloring
1 tablespoon vanilla extract

Place the egg whites, sugar, water, and food coloring in a bowl that can be taken to a bain-marie
Beat for 1 minute
Take it to the bain-marie (over boiling water) and beat without stopping for 7 minutes or until the whipped cream holds its shape when lifted from the mixer
Remove from heat and place in another bowl, add vanilla extract and beat for an additional minute
Let it sit to cover a cake of 8.6 inches.
