4 cups (about 1 pound) watermelon, rind removed and cubed
1/2 cup (about 8 ounces) lime juice
3 tablespoons honey

In a blender, blend all the ingredients to obtain a homogeneous mixture
Pour into a bowl, cover with plastic wrap and place in the freezer until firm (approximately 3 hours)
Remove from the freezer and, using a kitchen mallet, break the mixture
Blend again in a stand mixer until smooth
Place back in the original container, cover, and return to the freezer until firm once more
Remove from the freezer, scrape rapidly with a spoon or a specialized grater for scraping
Serve immediately, garnished with watermelon cubes.
