6 eggs

Prepare the fried tomato sauce according to the recipe below
Prepare the corn tortillas as explained in the previous recipe
Coat a non-stick skillet with a thin layer of oil and heat it up
Lightly dust the tortillas with salt and fry them one by one, quickly, until they're cooked through but not too crispy
Drain on paper towels
Fry the eggs
To serve, place a fried egg on each tortilla and garnish with the fried tomato sauce
If desired, top with sliced avocado
Serve 6 portions
Serve at breakfast or as a snack.
