1 tablespoon of caramel topping
1/2 cup of pureed pineapple passed through a blender
2 scoops or 4 tablespoons of coconut ice cream
1 bottle of club soda or sparkling water
1 tablespoon of caramel topping

Let the caramel topping drizzle down the inside of a tall glass
Add the pineapple puree, ice cream, and top with mineral water
Serve immediately with a straw and long-handled spoon
