Preheat the oven to 400°F
Tie the meat with kitchen twine to maintain its shape during cooking
Season with salt and black pepper

In a large skillet, heat the olive oil and sauté the lizard until it's golden brown on all sides

Add the beer and cook for two hours over low heat or until the meat is tender, replenishing with the cooking broth as needed
Remove the twine and let it cool
Reserve the cooking broth

With parchment paper, remove excess liquid from the meat, leaving it well drained, and wrap it in puff pastry, pressing the edges together with a little water

Place it on a baking sheet, brush with beaten egg, and bake until golden brown
Serve with fresh greens and reserved sauce.
