Heat oil in a wok or large skillet over medium-high heat
Add the pork, shrimp, carrot, celery, onion rings, salt, and pepper
Stir-fry until the pork is cooked through and the vegetables are tender
Add the chicken broth, cover the wok or skillet, and simmer for 10 minutes
Beat the egg in a small bowl and pour it over the top of the stir-fry
In a separate bowl, mix together some mashed potato starch with soy sauce and water
Add this mixture to the rest of the ingredients and stir until everything is well combined
Serve hot over white rice with an additional splash of soy sauce on the side, if desired.
