2 cups cooked spinach, chopped
1 cup sour cream (mix fresh or canned with 2 tablespoons lemon juice)
1/2 cup mayonnaise
1/2 cup chopped parsley
1/2 cup chopped green onion (white part only)
salt and black pepper to taste
1 small head of cabbage
fresh carrot, celery, and radish sticks

Cook the spinach and drain well on a strainer
In a bowl, mix together the sour cream, mayonnaise, parsley, green onion, salt, and black pepper
Add the spinach and stir well
Cover and refrigerate for at least a day or longer
Place this mixture inside a small head of cabbage from which you removed the core
Serve with fresh carrot, celery, and radish sticks
People eat these sticks after dipping them in the spinach mixture.
