To make the pork loin:
Pulse the meat in a food processor
Season with salt and pepper
Combine the eggs and flour
Mix well
Roll out the meat to 1 cm thickness
Spread the chopped prosciutto and black plum on top
Wrap like a rolo and bake in a moderate oven for about 40 minutes
To make the sauce: Sear the onion in butter until golden
Add the chicken broth dissolved in 1/2 cup of water
Add the raisins and cornstarch dissolved in red wine
To decorate: Slice the apricots into 1/2 cm thick rounds
Remove the seeds
Mix the beer, flour, and egg
Season with salt
Fry the apricot slices in the mixture and serve
Place the pork loin on a platter, surrounded by apricot slices
Cover the pork with the sauce.
